The Start Of A Healthy Eating Journey...


Sluggish, painful bloating, fatigued and moody was just a few symptoms my body has become accustomed to over the past year. After visiting my doctor, a blood test was ordered and the results returned as negative. Questions and concerned flooded my brain like Florida during hurricane season. So my body is feeling this way with NO explanation? Can we figure out the problem and exclude the pill? Would changing my diet change the way I felt? She stated that my diet looked "alright" and I should see if the medication prescribed will help with the bloating. 


That was the moment I knew I had to take matters into my own hands. My diet of "healthier" processed foods and sweets had to cease. But where do I start? Vegan. Plant based. Vegetarian. Pescatarian. Flexitarian. Pollotarian. Ovo Vegetarian. I just want to eat better minus the label, wait does that make me a flexitarian? After a few hours going down the "healthy eating" rabbit hole of Youtube. I came across this awesome channel called Avant Garde Vegan and I was hooked. As I stated before, I just want to eat better minus the label but I was intrigued with Veganism. Could I be vegan for a week? Challenge accepted!



My first vegan meal I prepared was a curry with potatoes and chickpeas........ it turned out to look exactly like beef stew. While eating this delicious bowl of beef stew vegan curry, I felt it needed something. I know! An OVER-EASY EGG. Hold up, did I just give up before I tried? Yes, no, maybe. I made that egg, ate it with the curry and tried to act like I was not disappointed in myself. Disappointment never tasted so good. That was the moment I knew I had to ease into this thing. 



Tired of being hungry and making excuses of why I was only eating sautéed Brussels Sprouts with cauliflower rice due to my lack of knowledge. I made up my mind A Change Is Gonna Come. Early one Sunday morning I woke up determined to do research aka YouTube for vegan meal prepping. The recipes called for some ingredients I knew my local Trader Joe's carried and some I thought I had to visit Equestria to purchase. Overwhelmed is not the word.  



Being ignorant of what I put in my body is unacceptable. I need to figure out what works for me. This is where the real work comes in. Research, visit a dietician, and try new recipes from The Healthy Gut, Raw and Radiant, and The Easy Vegetarian. I really wanted to jump head first into this venture and figure life out as it came. *Insert long exacerbated exhale here* Anything is worth having is worth working for.


It’s time to get to work.......
