Quick, Easy Açaí Bowl


Açaí berries come from Central and South America. You can typically buy them in a powder or frozen form elsewhere in the world. It’s hailed as a ‘superfood‘ because of it’s antioxidants properties – specifically the ability to boost immunity, repair and prevent cell damage and improve heart health. The berries have a yummy slightly fruity but rich taste, which I suspect has added to the popularity.

My first attempt to make an açaí Bowl, I made an amateur mistake. I did not blend properly and had chunks of spinach in my acai bowl. I consider myself a sneaky mom who adds greens to EVERYTHING so, this was a rookie mistake. Not only I am sneaky, I also obsess over small things like chunks of spinach in my açaí bowl. During a Trader Joe's excursion, the spinach chunk debacle was solved! Just blend the spinach with a liquid prior to adding the other ingredients DUH. This may seem like a no brainer to you but for me it took hours (maybe days, if I'm being honest) to think of this. But what liquid shall I use? After hours of research I decided to try coconut water.

Just so you know, the only time I enjoy coconut water is when I am sipping it beachside with a tiny umbrella. Imagine my daughters surprise when I brought 2 cases of Zico Coconut Water home. I know you’re wondering why did you add coconut water to the açaí bowl if you don’t like it? For the health properties DUH. Low in calories, naturally free of fat and cholesterol , more potassium than four bananas, and super hydrating— Besides I can mask the taste with the other yummy ingredients. Adding the coconut water brought a depth of nuttiness to the açaí bowl that I actually really enjoy.

Easy Açaí Bowl


2 Sleeves of frozen açaí packs (I purchased mine from Trader Joe's)

1/3 Cup of Coconut Water

1/2 Banana

Handful of frozen berries (I used mixed berries from Trader Joes)

Handful of Greens (I used spinach)


Blend your coconut water and greens until completely smooth and water turns green. Add your açaí packs, frozen berries, and banana and blend until it starts to break down. The consistency should be thick and smooth. You can add more coconut water if needed. Scoop into a bowl, add toppings and enjoy!!!
